So kathal-alu sabji in\u00a0mustard oil and with coconut milk, a concoction that turned out very successful, paired with urad dal khichdi and scrambled eggs Gordon Ramsay style.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-480\" src=\"https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/f.jpg?resize=474%2C356&#038;ssl=1\" alt=\"\" width=\"474\" height=\"356\" srcset=\"https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/f.jpg?w=1200&amp;ssl=1 1200w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/f.jpg?resize=300%2C225&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/f.jpg?resize=1024%2C768&amp;ssl=1 1024w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/f.jpg?w=948&amp;ssl=1 948w\" sizes=\"auto, (max-width: 474px) 100vw, 474px\" \/><\/p>\n<h3 style=\"text-align: justify;\">Ingredients:<\/h3>\n<p style=\"text-align: justify;\">4 cups of skinned, cleaned jackfruit cut into cubes<br \/>\n2 potatoes peeled and cubed<br \/>\n1 tbsp cashew nuts<br \/>\n1-2 cups Coconut milk<br \/>\n1 cinnamon stick<br \/>\n1 bay leaf<br \/>\n\u00bd tsp crushed pepper<br \/>\n1 small onion sliced<br \/>\n2 green chillies<br \/>\n6 flakes of crushed garlic<br \/>\n\u00bd tsp turmeric powder<br \/>\n1\/3 tsp red chilli powder<br \/>\n1 tsp coriander powder<br \/>\nMustard oil (or oil of your choice)<br \/>\nSalt to taste<\/p>\n<h3 style=\"text-align: justify;\">Instruction:<\/h3>\n<p style=\"text-align: justify;\">&#8211; Fry cashewnuts in ghee till golden brown. Set aside.<br \/>\n&#8211; Pressure cook jackfruit with 1 cup water for 2 whistles, cool, open and drain.<br \/>\n&#8211; Heat ample mustard oil, fry chopped potatoes. Set the potatoes aside on a paper towel.<br \/>\n&#8211; Add a stick of cinnamon, coarsely crushed pepper, and a bay leaf into the hot mustard oil,<br \/>\nadd onions, green chilies and crushed garlic .<br \/>\n&#8211; Add turmeric, chili, coriander powder.<br \/>\n&#8211; Add jackfruit, let cook for a few minutes, add the potatoes, let cook for some time &#8211; it<br \/>\nbecomes soft and creamy this way.<br \/>\n&#8211; Add coconut milk, let simmer for a few seconds, add salt to taste, mix in cashews and serve!<br \/>\nNote: Can substitute cashews with prawns for a delightfully tasty non-veg version.
