Well, almost &#8211; for the restriction only applied to when I was cooking at home. If I had an option for whole wheat outside, I would take it but I wasn&#8217;t too finicky.<\/p>\n<p style=\"text-align: justify;\">They say one mellows down with age. It happened with me, anyway. Now I don&#8217;t care so much. I figured that since I was eating refined stuff outside anyway, at least I could stop being so harsh with myself. at home. That attitude made my breads a lot softer. I&#8217;ve used maida and ragi huri hittu &#8211; baby food made with ragi &#8211; in a 50:50 ratio. You could use just ragi huri hittu and see how it turns out &#8211; please do leave a comment on how that went!<\/p>\n<h2 class=\"ERSName\">Ingredients<\/h2>\n<div class=\"ERSIngredients\">\n<p>\u00bd\u00a0cup all purpose flour<br \/>\n\u00bd cup ragi huri hittu, (OR 1 cup ragi\u00a0huri hittu and no plain flour)<br \/>\n\u00bc cup <em>besan<\/em> (gram flour)<br \/>\n\u00bd tsp baking soda<br \/>\n1 tsp baking powder<br \/>\n2 tbsp fine <em>rava<\/em> (cream of wheat or sooji)<br \/>\n2 to 3 pinches of nutmeg powder or grated nutmeg<br \/>\n\u00bd tsp cardamom powder<br \/>\n\u00bd cup ghee (semi solid) or butter at room temperature, 80 grams<br \/>\n\u00bd cup sugar or \u00a0\u2154 cup brown sugar<br \/>\n\u00bd tbsp curd or yogurt<br \/>\n1 to 2 tbsp milk<br \/>\nA few almonds<\/p>\n<h2 class=\"ERSClear\">\u00a0Instructions<\/h2>\n<\/div>\n<div class=\"ERSInstructions\">\n<ul>\n<li class=\"instruction\">Preheat the oven to 180\u00b0 C and line a baking tray with foil.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">Sift the the dry ingredients together &#8211; the flours, baking powder and baking soda. keep aside.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">Cream\u00a0the ghee and sugar with a whisk or electric mixer until\u00a0smooth, light and creamy.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">Mix in curd.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">Add the sifted dry ingredients. rava, and cardamom and nutmeg powders.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">Gently mix everything. do not knead. just mix and gather to a smooth dough. if the mixture is too crumbly and you cannot bring it together, add 1 to 3 tbsp of milk. mix lightly until the desired consistency is achieved.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">Make goose-berry sized balls from the dough,\u00a0roll them evenly in your palms. slightly flatten them. and press almonds on the top lightly.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">You can also make some crisscross designs on them with a fork or toothpick.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">Place the cookies in a baking tray, leaving\u00a0some space between them so that they can expand while baking.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">Bake for 20-25 mins till light golden and cool on\u00a0wire racks.<\/li>\n<li class=\"instruction\" style=\"text-align: justify;\">If any remain, store them in an air tight container.<\/li>\n<\/ul>\n<h3>Variation: Banana Ragi Cookies<\/h3>\n<p style=\"text-align: justify;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-342\" src=\"https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/DSC2883.jpg?resize=474%2C295&#038;ssl=1\" alt=\"\" width=\"474\" height=\"295\" srcset=\"https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/DSC2883.jpg?w=1200&amp;ssl=1 1200w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/DSC2883.jpg?resize=300%2C187&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/DSC2883.jpg?resize=1024%2C637&amp;ssl=1 1024w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/DSC2883.jpg?w=948&amp;ssl=1 948w\" sizes=\"auto, (max-width: 474px) 100vw, 474px\" \/><\/p>\n<p style=\"text-align: justify;\">I had an over ripe banana sitting on the counter while I was baking these and thought hey! Why not mix that in! I simply mashed the banana and added it to the dough. The cookies turned out a little softer and chewier, and I like them like that.
