It has ability to provide fast and instant energy, regulate and improve bowel movements, and stabilize blood sugar levels, while also providing an essential source of vitamin B1 to the human body. Do you know that rice slows down the aging process? When I learned Vedic meditation from Tim Mitchell (http:\/\/www.vedicmeditation.eu\/en\/ayurveda\/), he told me that after the age of fifty, one should eat rice and not wheat.<\/p>\n<p>We love rice and I am always on the look out to create new preparations with rice. Here is a nice dish that combines pumpkin with rice.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 cup rice<br \/>\n200 gms pumpkin<br \/>\nSalt<br \/>\n2 tbsps Oil<br \/>\n1 Bay leaf<br \/>\n\u00bd tsp grated ginger<br \/>\n1 green chilli cut fine<br \/>\nA few curry leaves<br \/>\n\u00bc tsp Cumin seeds<br \/>\n\u00bc cup roasted and ground pea nuts<br \/>\n1 tsp sugar<br \/>\n2 tbsps water<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>\u2022 Cook the rice and keep aside.<br \/>\n\u2022 Clean and cube the pumpkin, smear with oil, add salt, roast in the pre heated oven at 250 degrees for \u00bd\u00a0hour to 45 minutes. Keep a small bowl of water in the center of the pumpkin pieces so that they won\u2019t dry out.<br \/>\n\u2022 Cut the roasted pumpkin into small pieces.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-275\" src=\"https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/pumpkin.jpg?resize=300%2C217&#038;ssl=1\" alt=\"pumpkin\" width=\"300\" height=\"217\" srcset=\"https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/pumpkin.jpg?resize=300%2C217&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/pumpkin.jpg?resize=1024%2C740&amp;ssl=1 1024w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/pumpkin.jpg?w=1992&amp;ssl=1 1992w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/pumpkin.jpg?w=948&amp;ssl=1 948w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/pumpkin.jpg?w=1422&amp;ssl=1 1422w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><br \/>\n\u2022 Heat oil in a thick bottomed vessel; add cumin seeds, when they splutter, add the bay leaf, grated ginger, cut green chilli, and curry leaves. Stir for ten seconds.<br \/>\n\u2022 Add the pumpkin pieces, sugar and mix well.<br \/>\n\u2022 Add the cooked rice, salt, roasted and ground peanuts, and 2 table spoons of water.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-276\" src=\"https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/ground-nut.jpg?resize=300%2C231&#038;ssl=1\" alt=\"ground nut\" width=\"300\" height=\"231\" srcset=\"https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/ground-nut.jpg?resize=300%2C231&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/ground-nut.jpg?resize=1024%2C789&amp;ssl=1 1024w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/ground-nut.jpg?w=1611&amp;ssl=1 1611w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/ground-nut.jpg?w=948&amp;ssl=1 948w, https:\/\/i0.wp.com\/www.ashwita.com\/food\/wp-content\/uploads\/ground-nut.jpg?w=1422&amp;ssl=1 1422w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><br \/>\n\u2022 Mix well and remove from the fire after about 4 minutes.
