Pairing it with a rice based item like <em>idiappam<\/em> or <a href=\"https:\/\/www.ashwita.com\/food\/appam\/\"><em>appam<\/em>\u00a0<\/a>takes it to another level altogether, although it is also fine with <em>chappatis<\/em>.<\/p>\n<p style=\"text-align: justify;\">It is wonderful on those days when you&#8217;ve eaten something too heavy or spicy and want something to help the body come back to balance. It is soothing, but filling at the same time.<\/p>\n<p style=\"text-align: justify;\">Time taken: 20 min<br \/>\nServes 3-4<\/p>\n<h3 style=\"text-align: justify;\">Ingredients<\/h3>\n<p style=\"text-align: justify;\">1 big potato, peeled and cubed<br \/>\n1 carrot, peeled and cubed<br \/>\n1 cup cauliflower florets<br \/>\n\u00bd cup peas<br \/>\n\u00bd cup sweet corn (optional)<br \/>\n4 eggs, <a title=\"The Perfect Boiled Egg\" href=\"https:\/\/www.ashwita.com\/food\/the-perfect-boiled-egg\/\">hardboiled <\/a>(optional)<br \/>\n1 500 ml\u00a0can coconut milk<br \/>\n2 tsp chopped ginger<br \/>\n1-2 green chilies, chopped<br \/>\n2 sprigs curry leaves<br \/>\n1 tsp mustard seeds<br \/>\n2 tbsp coconut oil<br \/>\nsalt to taste<\/p>\n<h3 style=\"text-align: justify;\">Method<\/h3>\n<p style=\"text-align: justify;\">Heat coconut oil in a wok, and add the mustard seeds. When they splutter, add the ginger, chilies and the curry leaves.<\/p>\n<p style=\"text-align: justify;\">Add the potatoes, carrots, cauliflower, baby corn and peas.<\/p>\n<p style=\"text-align: justify;\">Add salt, mix, then cover and cook. Stir\u00a0occasionally and add a little water if it starts to stick to the bottom.<\/p>\n<p style=\"text-align: justify;\">Check to see if the potatoes are cooked &#8211; they should be easy to poke through with a knife. Once they are done, add the coconut milk and bring to a boil.<\/p>\n<p style=\"text-align: justify;\">Cut the eggs into pieces and add to the curry.<\/p>\n<p style=\"text-align: justify;\">Take off the heat and adjust the salt if necessary.<\/p>\n<p style=\"text-align: justify;\">Serve hot.<\/p>\n<p style=\"text-align: justify;\">\n","protected":false},"excerpt":{"rendered":"<p>Stew is one of the most soothing, calming dishes I know of.
