You don&#8217;t have to switch to eating raw for the rest of your life, but just eating raw one day a week, or a month, or for a few days at a stretch, can be a wonderful way to detox and bring the body back in balance. Some people do juice fasts, but I find those pointless as you are grinding away all the fibre, and science agrees.<\/p>\n<p style=\"text-align: justify;\">This is the salad I make when I want to eat only raw, but I am pretty hungry. It is a myth that raw foods cannot be filling. Try this salad and you&#8217;ll know what I&#8217;m talking about!<\/p>\n<p style=\"text-align: justify;\">You can put a lot of things in. I just search my pantry, find anything sprout-able and throw it in . Ditto for the veggies. Did you know that you can eat\u00a0<em>turai<\/em> (ridge gourd) and\u00a0<em>lauki<\/em> (bottle gourd) raw? Did you know that you could even eat ladies finger and brinjals raw? Maybe that would be pushing it, for most people, but at least add the\u00a0<em>turai<\/em> and\u00a0<em>lauki.\u00a0<\/em><\/p>\n<p style=\"text-align: justify;\">Time taken: 10 min + 24 hours soaking and sprouting<\/p>\n<h3 style=\"text-align: justify;\">Ingredients<\/h3>\n<p style=\"text-align: justify;\">(All ingredients are optional, pick what you like\/ have)<br \/>\n<strong>For Sprouting:<\/strong><br \/>\n2 tbsp whole mung dal<br \/>\n2 tbsp\u00a0<em>matki\u00a0<\/em>or moth bean<br \/>\n2 tbsp whole <em>masoor<\/em> dal<br \/>\n2 tbsp horse gram<br \/>\n2 tbsp black\u00a0<em>chana<\/em> or chickpea<br \/>\n2 tbsp dried white or green peas (<em>vatana<\/em>)<br \/>\n3 tbsp raw peanuts<\/p>\n<p style=\"text-align: justify;\"><strong>Nuts and dried fruits:<\/strong><br \/>\n2 tbsp almonds<br \/>\n2 tbsp raisins<br \/>\n2 tbsp cashew nuts<br \/>\n3-4 dates<br \/>\n2-3 dried figs<\/p>\n<p style=\"text-align: justify;\"><strong>Fruits<\/strong>:<br \/>\nApple, thinly sliced<br \/>\nOrange, seeds removed and sectors chopped in half<br \/>\nGrapes<br \/>\nPomegranate, de-seeded<br \/>\nCoconut, meat chopped<\/p>\n<p style=\"text-align: justify;\"><strong>Seeds<\/strong>:<br \/>\n1 tbsp sesame (wonderful in winters)<br \/>\n1 tbsp poppy seeds (wonderful in summers)<br \/>\n1 tbsp chia seeds (<em>sabja<\/em> seeds are a great <em>desi<\/em> substitute)<br \/>\n1 tbsp pumpkin seeds, fresh or roasted<br \/>\n1 tbsp sunflower seeds, fresh or roasted<br \/>\n1 tbsp flax seed powder<\/p>\n<p style=\"text-align: justify;\"><strong>Leaves<\/strong>:<br \/>\nBaby spinach<br \/>\nBrahmi<br \/>\nAmaranth<br \/>\n<em>Methi<\/em> or fenugreek<br \/>\n<em>Dhania<\/em> or coriander<br \/>\n<em>Pudina<\/em> or mint<br \/>\n<em>Shepu<\/em> or dill<\/p>\n<p style=\"text-align: justify;\"><strong>Vegetables:<\/strong><br \/>\n<em>Turai<\/em>\u00a0or ridge gourd<br \/>\n<em>Lauki<\/em> or bottle gourd<br \/>\nSnake gourd<br \/>\nZucchini<br \/>\nBroccoli (can be fresh or steamed)<br \/>\nCucumber<br \/>\nCarrot<br \/>\nRadish<br \/>\nBeetroot<br \/>\nTomatoes (add only if you aren&#8217;t adding any fruits or nuts)<\/p>\n<p style=\"text-align: justify;\"><strong>Dressing<\/strong>:<br \/>\n2 tbsp olive oil<br \/>\n2 tbsp lemon juice<br \/>\n2 tbsp honey (if you are using fruits or nuts)<br \/>\nDried Italian herbs (if there are no fruits or dry nuts)<br \/>\nSalt and pepper<\/p>\n<h3 style=\"text-align: justify;\">Method<\/h3>\n<p style=\"text-align: justify;\">Soak all the sprouting ingredients together overnight.<\/p>\n<p style=\"text-align: justify;\">Drain the water and let them sit at least for 8 hours or so. Usually, I take as much as I need for the salad, and let the rest continue sprouting. Refrigerate after 2 days of sprouting, and they will do just fine in the fridge. Rinse once everyday.<\/p>\n<p style=\"text-align: justify;\">Soak the dry fruits and nuts. You could use them as is, but their nutritive value increases manifold if soaked overnight. You can drink the water they were soaked in.<\/p>\n<p style=\"text-align: justify;\">Shred the leaves and chop the vegetables. Cucumber, carrots, beetroot and radish can be grated for better texture.<\/p>\n<p style=\"text-align: justify;\">Mix the ingredients for the dressing and season with herbs, salt and pepper, to taste.
