It was also the first time I ate salad for breakfast. And it was love at first bite.<\/p>\n<p style=\"text-align: justify;\">Couscous is often confused with broken wheat. They are not the same. Couscous is really a pasta that looks like a grain, and is made from semolina. It is much faster to cook when compared to broken wheat. If you don&#8217;t have couscous, you could probably substitute it with cooked broken wheat.<\/p>\n<p style=\"text-align: justify;\">The most special ingredient in this dish is the parsley. It adds a wonderful freshness.<\/p>\n<p style=\"text-align: justify;\">Time taken: 10 min<br \/>\nServes 3-4<br \/>\nMeasuring cup used: 200 ml<\/p>\n<h3 style=\"text-align: justify;\">Ingredients<\/h3>\n<p style=\"text-align: justify;\">1 cup couscous<br \/>\n1 cup chopped Greek cucumber<br \/>\n1 cup chopped tomatoes<br \/>\n\u00bc\u00a0cup fresh parsley, chopped<br \/>\n2 tbsp extra virgin olive oil<br \/>\n1 tbsp lemon juice<br \/>\n2 tbsp roasted pumpkin seeds (optional)<br \/>\nSalt and pepper to taste<\/p>\n<h3 style=\"text-align: justify;\">Method<\/h3>\n<p style=\"text-align: justify;\">Cook the couscous as per instructions. Usually this involves soaking it in an equal amount of boiling water and letting it sit covered for 10 min.<\/p>\n<p style=\"text-align: justify;\">Make the dressing by mixing\u00a0the lemon juice and the olive oil and adding salt and pepper.<\/p>\n<p style=\"text-align: justify;\">Mix the couscous with the chopped cucumber, tomatoes and parsley.
